Tortilla Turnover

First you get a tortilla.Then you you get any kind of
meat.It can be taco meat or turkey or ham.Then
you get shredded cheese.Then you get a side.
Its like mayo or ketchup or mustard.Then you
make it.First you put any meat on the tortilla.
Then you put the cheese.Then you put the
side.Then you warm it up for a few seconds.
Then you turn it over.That's how you make a
Tortilla Sandwich Turnover!!!!!!!!!!!

Christmas Chocolate Chips Pancake

This is our family traditional Christmas breakfast, chocolate chips pancake made from scratch topped with real Maple syrup,ham and whipped cream with extra chocolate chips on top.Fresh fruits on the side with hot cocoa.Yummy!!


2c. all purpose flour
2 eggs beaten
1T. baking powder
3T. sugar
1T. oil
1/2c.-1 c. of milk add some more for desired thiness/thickness of the batter.
1t. real vanilla extract
a pinch of salt
Mixing the batter just to get incorporated.


Adding mini morsel chocolate chips.

Cooking- wait when bubbles appear and burst then flip the other side.

Done!

Nestle mini morsel chocolate chips 1/2 of the bag.

 Preheat your flat grill or oil  lightly a flat frying pan in medium  low heat. I used an iron skillet.
Stir all dry ingredient (sugar,flour,salt,baking powder)in a bowl. except the mini chocolate chips. Mix all wet ones(egg,milk,oil,vanilla) . Combine all together, adding more milk  until desired consistecy,  a little lumpy is ok, do not over mix for a  light fluffy pancakes. Mix the chocolate chips about half of a bag.Pour the batter  into the hot pan and wait until all the bubbles appear on top and burst then flip the other side carefully.Wait about a minute,then start another batch. The secret of tender pancake is just cooking both sides for about a minute and just flip it once only on each sides. Always mix the batter before adding  to the hot pan,the chocolate chips tend to settle at the bottom of the bowl.Serve with real Maple syrup,ham,fruits and whipped cream garnish with some mini chocolate morsel on top.

Lasagna with Whole Wheat Garlic Bread

My family favorite dinner, serve with a wholewheat garlic toast and fresh tossed salad.
Liezle  my friend, here it is, so easy to to prepare good for potluck and make ahead dinner and freezes well. What I do to save  time, in the weekends I prepare a big batch of pasta sauce and divide it for pasta dishes like spaghetti or lasagna,manicotti or  macaroni hot dishes, so on the weekdays I just thaw out the sauce and cook the pasta or stick the lasagna I prepared in the oven. Save a lot of time in the kitchen and more time for my kids homework!


A box of lasagna noodles cooked Al dente(about 5-6 minutes) in boiling salted water,drained
2c. Ricotta cheese or substitute a  low fat cottage cheese
1 egg beaten or use 2 egg whites for low fat
2c.shredded Mozzarella cheese or any  cheese you prefer shredded(Asiago,Provolone or cheddar is good)
Grated Parmesan cheese

Red Sauce:

1lb. ground meat low fat(I used low fat chicken or turkey)or you can use low fat Italian sausage
2 big cans of tomato sauce  or  buy a big can of  prepared spaghetti sauce(save you time)
1T. Italian spice mix (optional)
1-8 oz fresh mushrooms sliced or canned mushrooms drained
2-cloves garlic chopped
1-chopped small onion
1- bay leaf or dahon nang  laurel  (as my Inang Daling say)
salt,pepper and sugar to taste(my family like it sweet so I add a little more)

-Brown the meat and drain all the fat, add garlic and onions and mushroom cook until fragrant add the sauce,spices salt ,pepper,sugar, let it simmer in low heat about 20-25 minutes set aside.

-In a bowl, mix beaten eggs, cottage cheese or ricotta set aside

-Preheat oven to 350
-Spray a Pyrex pan with a little oil and  put the red sauce at the bottom then the cooked pasta top with the cottage cheese mixture then shredded cheese.Repeat the layering ending with the red sauce and cheese on top . Bake uncovered until cheese melted and bubbly about 15- 20 minutes. Let it cool a little  before serving to thicken the sauce.

 Garlic Bread

Whole wheat Italian bread or french,baguette,ciabatta any sturdy bread will do
2 clove garlic cut into half or use garlic powder
butter or margarine

-cut bread into thick slices, spread butter and sprinkle garlic powder or if  using fresh garlic- rub  garlic into the bread then toast  on a skillet in medium heat until  brown on both side. sprinkle parsley or dried Italian herbs if you like.

My Kids Favorite Manicotti

1- Box of Manicotti(cooked in boiling water about 5-6 minutes until Al Dente)drained the water
1-8 oz thawed  chopped spinach, squeeze all the water(I used a clean cheesecloth and squeezed it).   
1/2 c. Shredded Mozzarella cheese
1c.Ricotta cheese or substitute cottage cheese
1t. Italian seasoning
Grated Parmesan cheese and pepper to taste
A jar of your favorite spaghetti sauce
1-beaten egg

1. Preheat oven to 350
2. In  a bowl mix egg, ricotta cheese, Parmesan and spinach,seasoning and pepper,set aside.
3.Fill the cooked and drained Manicotti carefully with cheese/spinach mixture, top with a little bit of sauce and some Parmesan and mozzarella cheese.I used a  quart size zip lock bag and pipe the filling inside the pasta for easy clean up. Just fill the bag and cut  one of the corner and fill the pasta.
4. Bake for 10 minutes until cheese are bubbly!Serve with garlic toast and fresh tossed salad.
