Roasting Pumpkins

Roasted pumpkins puree for my pie/cake recipe.I freeze most of the puree for future use. 

I bought this sugar pumpkins or pie pumpkins variety for my  pies or cookie recipe.

We scrape the seeds and roasted them for snacks.

Bake at 325 degree oven for an hour.

After an hour of roasting.

Buttermilk Chess Pie




Baked Buttermilk Chess Pie

Using a store bought crust,this pie is a breeze to prepare.


Custard with grated nutmeg on top ready to be baked.

1/2 c. softened butter
1 1/2 c. sugar
2 T. flour
3 eggs beaten
1 c. buttermilk ( if you cant find buttermilk substitute this -  mix 1 c. milk with  a teaspoon of plain vinegar or lemon juice let it thicken.)
1T. vanilla extract
2T. grated lemon rind
1-9" store bought uncooked crust
freshly grated nutmeg/ cinnamon for topping

Preheat oven to 350.
Roll crust into a pie dish. Mix butter,sugar,eggs and the rest of ingredient except the nutmeg or cinnamon.
Pour into a prepared crust,top with nutmeg or cinnamon and bake for 45- 50 minutes. The center of the pie will be little  jiggly. Let it chill before cutting to pieces.

Real Old Fashioned Coconut Cream Pie

I got the recipe from all recipes.com but tweaked a little using frozen shredded coconut from the Asian store and used a good quality canned coconut cream, I used the Thai Kitchen brand with red label all natural no preservatives- no sulfites!My picky son said its ''Delish mom'', so It must be good, next time I'll make some for the church Christmas dinner  and see what the senior ladies have to say(including my mom in law).


1(9 inch) pie shell,baked
1 can coconut cream plus enough half and half to make it into total 3c. all together
3 egg yolks
1/2c. corn starch
3/4c. white sugar
1/4t. salt
1t. real vanilla extract or coconut extract
1c. frozen real coconut  flaked (thawed)
1/4 c. unsweetened coconut big flake if you can find them or just plain coconut flake will do( found in the baking section of your grocery store)

 For the whipped topping:

1c.heavy whipping cream
3T. powdered sugar

1. In a  medium saucepan,combine half and half/coconutcream mixture,yolks,sugar,cornstarch,salt.Bring it to boil over low heat,stirring constantly.Remove from heat and stir 1c. of thawed coconut flake and vanilla or coconut extract.Pour into baked pie shell and chill for2-4 hours, or until firm.
2. For the whipped topping- beat the cold heavy whipping cream until soft peak form (like a shaving cream consistency)add 3T. powdered sugar and whip some more.Set aside to chill .
3. Top with whipped cream and toasted coconut!!

note: To toast coconut,spread it in an ungreased pan and bake for 5-7 minutes at 350 or until golden brown,stirring  occasionally.

Cece's Turtle Pie








1 1/2c. crushed chocolate sandwich cookies
1/4c. white sugar
1/2c. softened butter
1~8 oz softened cream cheese
1~14 oz. condensed milk
6 individual  wrapped caramel candies,unwrapped
2T. brown sugar
2T. fresh milk(evaporated will do)
1/3 c. semi sweet chocolate chips
another 2T. of fresh milk
1/2 c. chopped pecans

Directions:1. To make the crust:In a medium bowl, mix cookie crumbs and white sugar. Stir in softened butter until mixture forms a ball.Press into a 9 inch pie pan.
2.To make the filling:IN medium size bowl,combined softened cream cheese and condensed milk, beat on high speed until smooth and creamy about  8 minutes. pour into the prepared pie crust.
3. To make the topping:IN a small saucepan, combine caramel candies,brown sugar and 2T. milk.Melt in a medium heat,stirring frequently,until smooth. Drizzle on top of the filling.
4.In a small saucepan, combine chocolate chips and 2 T. milk let it melt and drizzle on top. Chill for at least 3 hours before serving!Enjoy!

Libbys Famous Pumpkin Pie

This is so easy and always turn out delicious again and again.Try it!



3/4c. sugar
1/2t. salt
1t. ground cinnamon
1/2t. ground ginger powdered
1/4t. ground cloves
2 large eggs   1 can(15oz) Libbys 100% pure pumpkin
1 can(12 fl. oz)carnations evap. milk
1- unbaked 9 inc deep dish pie shell

-Preheat oven to 425F
-Mix all the dry ingredients in a bowl(sugar and spices)
-Mix eggs and pumpkin puree, add the dry ingredients then the milk mix it until well blended
-Pour into the pie shell
-Bake in preheated 425 oven for 15 minutes.Reduced the temperature to 350F and bake 40-50 minutes until knife inserted comes out clean.
 -Cool in a wire rack for 2 hours. Serve with whipped cream!!! Yummy!

Ube Macapuno Pie





This is my sister Cece recipe! Seriously delish! Try nyo!
1-9" prepared pie crust
1-12 oz  thawed frozen grated ube(found in the frozen section of the Asian store)
2 large eggs
1/2c. melted butter or margarine
1c. sugar
1T. flour
1c. whipped cream topping(1/2c.heavy cream beat untif stiff then add 1T. sugar)

1.Preheat oven to 350
2.Roll the crust to fit a pie pan.
3.Mix all remaining ingredients and bake for 45 minutes until firm to touch,let it cool.
4. Pipe the whipped cream on the side and top with macapuno. Chill and serve!

Delicious Peach Pie











We went to my in laws and picked  some sweet,luscious peaches and juicy tomatoes. So sweet and refreshing.The family ate all the sun ripened peaches as pie and top it with a dollop of Bluebell chocolate and vanilla ice cream. Yummy!



2-8" store bought pie crust(Pillsbury  at the dairy section)
2 lbs. fresh peaches peeled and sliced  medium thickness
1 c. granulated white sugar or less depending on sweetness of the fruits
1/4c. quick cooking tapioca or 2T. all purpose flour
1 t. cinnamon and 1/2t. nutmeg,1T. lemon juice,milk for brushing the top

1.Preheat oven to 350.
2.Mix fresh peaches,sugar,quick cooking tapioca,1t.cinnamon or nutmeg and lemon juice.
3.Roll the bottom crust and put the filling and  place the lattice(crisscross) on top and brush milk on top. 4.Bake for 45minutes to an hour. Serve with a dollop of ice cream.

4th of july blueberry pie

Ingredients:
4 cups of blueberries and a little bit of sliced strawberries
1/4 cup instant tapioca or 3T. of all purpose flour
1 cup sugar
3 dashes cinnamon
1 T lemon juice
1 t lemon zest
2-8"  Premade crust  pie crust
 a little milk (for brushing the top crust)

1.Preheat oven to 350
2.Mix berries and the rest of  ingredients in a bowl
3.Place the top crust or cut into desired  shapes (I used a cookie cutter)
4. Brush the top crust with milk using a pastry brush
5.Bake for an hour
6.Serve piping hot with vanilla ice cream on top!
7. YUM!
Kitchen Tip: Use foil underneath the pie pan for easy clean up!

Apple Pie

4 granny smith apples, sliced thinly
1 t. cinnamon
1 t.  nutmeg
1 T. flour
juice of 1 lemon
1 1/2 cup sugar
1 egg, beaten
1 premade pie crust

Preheat oven to 350 degrees.
Mix all ingredients together.
Place the bottom crust in the pie pan and add the filling.
Make a lattice on the top pie crust and brush with beaten egg.
Bake for one hour.
Serve with ice cream on top!

Strawberry Rhubarb Pie

3c. sliced rhubarb
2c. sliced strawberries
1c. sugar
3T. quick cooking tapioca
a pinch of salt
1/2t. of each cinnamon and nutmeg
 2- 9 inch pie crust(unbaked)

eggwash:1 egg mixed with 1/4 c. milk
cinnamon sugar : mix a T of cinnamon to 1/4c. sugar(for the topping)

1. Preheat oven to 350
2. In a bowl mix, strawberries and rhubarb and add the rest of the ingredients
3.Pour into prepared pie crust and flute or crimple the edges or make lattice  top.
4. Brush with an egg and milk egg wash and sprinkle  cinnamon sugar mixture on top and bake for 1 hour at 350.

Chicken Pot Pie

1 lb. skinless,boneless chicken breast halves-cubed
or use leftover roasted chicken meat,remove skin and bones diced
1/3c.butter
1/2c.diced celery                                        optional: kosher salt,pepper
1/2c.diced carrots
1/2c. diced potatoes                                          
1/3c.diced onion
1/2t.salt and 1/4 t. black pepper 
1/2t. poultry seasoning                     
1 3/4c.chicken broth
2/3c. evaporated milk or low fat milk
1/3c. all purpose flour
1 egg  white beaten   or milk for brushing
2(9 inch)unbaked pie crusts

1. Preheat oven to 425 F(220C)
2. In a saucepan,combine all veggies and cubed chicken meat,add water and cook for 10 minutes.Remove from heat drain and set aside.
3.Using the same saucepan, in a medium heat cook onions and butter until soft and translucent.Stir in flour,salt,pepper,poultry seasoning.Slowly stir in chicken broth and milk.Simmer over medium heat low until thick. Set aside.
4.Place the chicken and veggie mixture at the bottom of the pie crust.Pour hot liquid over it.Cover with top crust,seal,flute the edges and cut the excess dough.Make several small slit on top to allow steam to escape and brush  it with a little milk or beaten egg white. Sprinkle a little kosher salt and coursely ground pepper.
5.Bake in preheated oven to 30-35 minutes or until the pastry is golden brown and the filling is bubbly. Cool for 10 minutes before serving.

Sweet Potato Pie (KAMOTE PIE)

This recipe is so simple and so easy. I got the recipe  from All Recipe web sites.A good way to eat your veggies!This is my son  all time  paborito!

1pound sweet potatoes
1/2 c. butter or margarine
1c. white sugar
1/2c. evap. milk or fresh milk
2 eggs
1/2t.cinnamon
1/2t.ground nutmeg
1t.vanilla extract
1T. flour
1(9 inch) unbaked pie crust

1.You can bake or boil the sweet potatoes until tender.wrap in foil before baking and cook for 1 hour at 350
2.Peel and mashed,add butter,sugar and the rest of the ingredients,use a mixer to remove sweet potatoes fibers,beat in medium speed until smooth.
3. Pour into unbaked pie shell bake at 350(175 degrees  C)for 55 to 60 minutes or until knife inserted in the center comes out clean.



Pecan Pie

This recipe is from the back of Karo corn syrup bottle.We used  Karo syrup to top  our pancakes back then  when we  were little.

1c.Karo syrup
3 eggs
1c. white or brown sugar
2T.melted butter
1t.vanilla extract
1 1/2c. pecans
1 unbaked 9-inch deep dish pie crust

1. preheat oven to 350
2.stir the first 5 ingredients throughly. Mix pecans
3.pour into pie crust
4.bake in the center of oven for 60-70 minutes.cool for 2 hours,store pie in refrigerator


tips-  spray measuring cup with oil before measuring the karo syrup for easy clean up.Try different nuts if pecans are unavailable. Very good!

Triple Coconut Cream Pie



Crust:
 1C.  APFplus 2T
1/2 C, sweetened coconut  flakes
1/2C. unsalted butter,cut into small pieces
 2t.sugar
1/4t.salt
3-5T.ice water

mix all 5 ingredients until mixture are crumbly,add water a tablespoon at a time pulsing it in food processor or use pastry cutter until the butter is in pea size.The dough will be crumbly. Form into ball wrap in plastic and chill for one hour.Preheat oven to 400 roll dough in  pie pan  place a piece of foil on top of the dough  fill it up with beans or rice so the dough wont bubble,  bake for 14-16 min. Discard the beans/rice and completely cool.

8oz coconut milk
2c.sweetened coconut
1/4t salt
2large eggs
2c.wholemilk
1/2c.sugar
1/3c  APF
1 T vanilla extract
2T butter
mix milk,coconut milk in a pan add vanilla extract cook in medium heat stir until mixture comes to a boil. In a bowl whisk eggs,sugar and flour.Temper the eggs by mixing a small amount of scalded milk while whisking,add the egg mixture to scalded milk add coconut.cook in high heat until it thickens and begins to bubble.remove from heat and 2Tof butter.transfer into bowl place it over a bowl of ice water.stir occasionally until its cool,place a plastic wrap on the surface to prevent skin from forming and refrigerate.it will thickens as it cools

Fill the cool crust with the pastry cream and topped with whipped cream and toasted coconut.

2c chilled whipped cream
1/3c. sugar

in an electric mixer,whip cream and sugar until peaks form,fill up a pastry bag with a star tip and pipe around the pie.

for toasted coconut:
preheat oven to 350,spread coconut chips or shredded coconut in a pan toast in the oven 5-6 minutes stir once  cool and sprinkle it on top.
