Cranberry Strawberry Apple Jam

This jam is so beautiful a mixture of cranberries which is in season right now, my leftover  frozen strawberries we picked from the pick your own strawberry farm and apples for the natural pectin. It so good with toast, biscuits, pancakes or thin it a bit with water for cheesecake topping! How about that! A right balance of sweetness and tartness, nice crimson red color for the holidays. This would be a nice Christmas gift too.
All in one pot-chopped cranberries,strawberries,2 small Granny Smith apples and sugar. Very simple!

Let it reach a full  rolling boil

Canning jars and band in boiling water
Lids in hot water do not boil!

The jam needs to reach 220 before bottling. Use a candy thermometer for this.

Adding the hot jam carefully.

Process jam for 8-10 minutes in boiling water.

This recipe yielded  3 -8 oz jars. You'll hear a popping sound as the jams cool.

Beautiful crimson Christmas jam

Cranberry jam on toast!
1-12 oz fresh or frozen cranberries- chopped in the food processor
2c. fresh or frozen strawberries
2 small Granny Smith apples peeled and chopped
4c. white sugar

1. Clean 3-8oz canning jars, place them in a pot let it gently boil with the bands. Place the new lids in warm water.I usually place a clean kitchen towel at the bottom of the pot to ensure  my canning jars wont crack.

2. In a non reactive pot, mix all the fruits and sugar bring it to boil over medium heat, stirring often. Keep the mixture in a rolling boil stirring constantly until the jam reaches 220 degrees on  a candy thermometer. About 25-30 minutes. Skim foam that rises on top.

3.Ladle the hot jam carefully into a prepared jars, filling 1/8 inch of tops. Wipe jar rims and threads. Cover with lids and screw bands tightly. Process in a water bath for 10 minutes. After the jars cools, check the seals by pressing middles lids with finger. If the lids springs back it is not sealed and refrigeration is necessary. You will hear a popping sounds while the jam cools that means it is sealed.Enjoy!!!
