Corn Bread Dressing

My delicious corn bread dressing!

I learned this recipe from one of  my coworker and a tradition for my family  Thanksgiving feast since.Taste so much better than the store bought. I cheated a little by using the corn kits mix from the grocery store. Make sure you don't use the sweet kind cornbread mix like Jiff.The secret is the poultry seasoning ,chicken broth, lots of celery and onions.

1-corn kits corn bread mix(baked)just follow direction at the back--1 egg beaten,2/3c. water then mix it and bake at 350 for 10 minutes.

1(about 2c.) whole bunch of celery coarsely chopped in the food processor
2 medium size onions coarsely chopped in the food processor
1 bunch of green onions minced
2T. parsley minced
2c. or more of store bought or homemade chicken broth
1T. olive/canola oil
2- beaten eggs
 just a dash  of poultry seasoning,salt, black pepper
1. Preheat oven to 350
2.In a medium  frying pan add  1 T. oil and saute all the aromatic veggies stir and cook it until transparent.
3. Spray baking dish with a little oil.Crumble the cooled cornbread, mix the cooked celery, add  poultry seasoning(I just use a little of the poultry seasoning  about 1/2t. it goes a long way),salt, pepper  and chicken broth. Taste it and adjust the seasoning. Add  beaten eggs and mix throughly. Cover with foil and bake it for 35 minutes, remove the foil to brown the top and bake it for additional 10 minutes until a nice golden crust is formed on top.
